Fish taco with Skreiperle 🌮

These easy fish tacos are a great family meal, quick to make and on the table in about 20 minutes! The perfect healthy dinner recipe everyone among your family and friends will love!

  • 1 jar Skreiperle 100g
  • 150 gr firm white fish such as cod
  • 1 garlic clove, minced
  • 2 tbsp mayonnaise
  • 1 ½ limes
  • ½ tsp habanero, minced
  • 200 gr cherry tomato
  • ¼ yellow onion
  • 1 packet of fresh spinach leaves
  • Coriander
  • 1 tbsp olive oil
  • Corn tortillas
  • Salt & pepper

Instructions

  1. To begin, slice the fish into chunks and combine with the juice of 1 lime, 2 tbsp of mayonnaise, minced garlic and habanero and some lime zest. Leave to marinate for 30 minutes.
  2. Meanwhile, dice the cherry tomatoes and the onion, chop the coriander. Add 1 tbsp of olive oil and the juice of 1/2 lime. Mix together and season with salt and pepper.
  3. Next step is blanching the spinach. Clean and trim spinach leaves. Wash them thoroughly under cold water. In a pan bring water to the boil then add the leaves and let them boil for 2-3 minutes. Using a slotting spoon remove spinach and plunge into a large bowl of ice cold water (this will stop the cooking process). Remove spinach from water and tightly squeeze out all of the excess water from the spinach leaves. Set aside.
  4. To cook the fish, heat a frying pan over a high heat with a splash of olive oil.Cook the cod until golden brown on both sides, for around 1–2 minutes.
  5. To toast the tacos, place one at a time into a dry, hot frying pan until toasted on each side or follow the instructions on the package.
  6. To serve, fill the tacos up to the top with the tomatoes mix, spinach, fish and Skreiperle!
