Nordic Furikake

Furikake is a Japanese recipe for a topping or sprinkle that is usually used to flavour rice. This topping is usually a mixture of dried seaweed, bonito flakes, toasted sesame seeds, sugar and salt but there are also a lot of variations, and the authors at RenMat came up with an amazing Nordic version of it!

  • 3 tbsp sesame seeds, toasted
  • 3 tbsp dried seaweed flakes
  • 2 tbsp grated bottarga
  • 2 tsp dried sea buckthorn
  • 1 tsp raw cane sugar
  • 1 pinch sea salt

Instructions

  1. Toast the sesame seeds on a low to medium heat, they can burn quickly if you are not careful. Set aside and cool.
  2. Put the bottarga, the seaweed, the sea buckthorn and the sesame seeds in a bowl. Mix and season with sugar and salt.
  3. Put in an airtight container and store in the dark.
