  • 2 shallot
  • 2 garlic cloves
  • 2 tbs butter
  • 1 dl white wine
  • 2 dl cream
  • 50 g parmesan
  • 1 brown crab
  • dill
  • 1 ts salt
  • 1 ts pepper
  • 300 g bucatini or spaghetti
  • Bottarga Polveralis
  • Lemon

Instructions

  1. Finely chop the shallots and the garlic. Heat the butter in a pot. Sauté the shallot and the garlic for a few minutes until they are soft and shiny.
  2. Pour the white wine in the pot and reduce to half. Add the cream and turn down the heat so that it just simmers.
  3. Grate the parmesan and stir it into the sauce. Add the crab meat and some coarsely chopped dill. Taste the sauce and balance it with salt and pepper.
  4. Cook the pasta following the instructions on the package. Strain the pasta water, but save a little bit of cooking water to dilute the sauce with. Add the pasta to the sauce and add a the pasta water you just saved to add a bit of creaminess. Stir well and plate.
  5. Serve with lemon slices and Bottarga Boreale to your taste.
