Bottarga Polveralis is a northern Norwegian delicacy of salted, dried and grated cod roe.
Roes are hand-picked fresh from the fishing boats, lightly salted, and dried outside. The cool arctic winter allows the bottarga to slowly mature over a period of 15 weeks, developing flavor and complexity. 😋
Bottarga Polveralis has an exquisite taste of the sea, packed with richness and umami; can be used alone but also works beautifully as a flavor enhancer.
Sprinkle it over scrambled eggs, potatoes, white pizza, vegetables or use it as a spice in fish tacos, mayonnaise, or salads. Bottarga Polveralis is also very convenient to use as a flavor enhancer in butter.
